A Mediterranean Summer

This salad defines a European summer, but you can have that experience at home too. And best of all, it’s beyond simple to make. And so fresh.

I made this salad as a starter for when my boss came to visit me in Atlanta. She's hard to impress and a huge foodie, so the pressure was really on to deliver a home-cooked meal that would be unforgettable (unfortunately a funny mishap, fender-bender situation outshined the food-heavy weekend, but we won’t get into that here).

Anyways, I got to crafting a menu and ultimately pulled together a Mediterranean-inspired dinner course containing a starter, main, and dessert. However, this came with its own challenges. I got super sick the day before and all of the prep I had planned to do…didn’t happen. Therefore, I had to manage to pull this dinner spread off in less than 7 hours. Luckily, at least this starter was easy to make and didn’t require much time to pull together!

Ingredients:

  • Peaches

  • Grape Tomatoes

  • Green Radish

  • Spinach

  • Arugula

  • Mint

  • Fresh Mozzarella

  • Olive Oil

  • Lemon

  • Italian Seasoning

  • Salt, to taste

Cooking Steps:

  1. Chop & Toss: I grilled up some peaches, sliced up grape tomatoes, and cut up some green radish (from the home garden). Toss them into a bowl with a generous handful of spinach, arugula, and mint. It’ll look like a color palette.

  2. Cheese Please: Tear up some fresh mozzarella for a rustic feel. Burrata would also pair amazing with this. It’s just hard to get your hands on at times but fresh mozzarella won’t disappoint, I swear.

  3. Dressing Time: A good sprinkle of olive oil, a squeeze of lemon to wake everything up, a sprinkle of Italian seasoning, salt to taste, and a drizzle of balsamic glaze. Simple, but flavorful.
