Thankfully Wingin’ It

The holidays are fast approaching, which means it’s time to start planning your menu. If you’re hosting Thanksgiving dinner this year, wings likely aren’t the first thing that come to mind. But hear me out, they can be a fun and tasty addition to your spread.

These baked wings are super easy to throw together. They come out crispy on the outside and juicy on the inside thanks to a simple seasoning blend. I love to serve them as an appetizer or snack to tide everyone over while the turkey rests. Plus, they’re mess-free, which is a major bonus when you’ve got a full house.

The best part? The flavor profile pairs perfectly with all your Thanksgiving favorites. The herbs and lemon brighten things up and cut through the richness of the gravy and sides. Ingredients:

  • 3-4 lbs chicken wings, separated into drums and flats (I used 20 wings in total!)

  • 1/4 cup olive oil

  • 2 tbsp fresh garlic or dried garlic

  • 1 tbsp tomato paste

  • 2 tsp fresh thyme

  • 2 tsp baking powder

  • 1 tsp cinnamon powder

  • 1 tsp cayenne or paprika

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • Salt and pepper to taste

  • Lemon to taste

  • Parsley for garnish

Cooking Steps:

  1. Prep the Wings: Rinse the chicken wings under cold water and pat them completely dry with paper towels. Make sure they are fully dried to help achieve a crispy exterior.

  2. Make the Seasoning: In a large bowl, combine the olive oil, garlic, tomato paste, thyme, baking powder (the secret ingredient to make the wings crispy), cinnamon, cayenne/paprika, basil, oregano, salt, and pepper. Whisk well until fully incorporated.

  3. Coat and Toss: Add the chicken wings to the bowl and toss to coat evenly in the seasoning mixture. Cover and marinate for at least 30 minutes, or up to overnight.

  4. Bake ‘Em: Preheat oven to 400°F. Line a large baking sheet with foil and grease lightly with oil. Arrange wings in a single layer and bake for 45-55 minutes, flipping halfway through. They’re done when the skin is crispy and browned.

  5. Finish with a Drizzle: Once wings come out of the oven, drizzle with a bit more lemon juice and sprinkle with chopped parsley. Serve warm alongside all your Thanksgiving favorites.
