Pink Deviled Eggs
Add a pop of color to your next galentine’s party spread with these pink deviled eggs! Not only are these beautiful, the flavor pairing is incredible. Earthy beets accent the richness of the eggs and filling perfectly. It doesn’t get easier or more impressive than this. Ingredients:
6 hard-boiled eggs
1-2 small beet, cooked and peeled (see how I used beets in my Blush for Love pasta)
2 tablespoons mayonnaise
1 teaspoon mustard
1 teaspoon white vinegar (optional)
Salt, pepper, and paprika to taste
Fresh dill, chives, or parsley for garnish (optional)
Cooking Steps:
Prepare the Beet Water: Place the peeled beets in a pot with enough water to cover it.. Bring the water to a boil and then simmer for about 10 minutes. Remove the pot from the heat and strain the beet water into a bowl.
Dye the Eggs: Once you've prepared the beet water, let it cool to room temperature. Submerge the hard-boiled eggs in the beet water, ensuring they are fully covered. Let the eggs soak in the beet water for at least 30 minutes to achieve a vibrant pink color. You can leave them longer or overnight for a deeper hue if desired. Once the eggs have reached the desired color, remove them from the beet water and pat them dry with paper towels.
Prepare the Filling: Cut the eggs in half lengthwise and carefully remove the yolks. Place the yolks in a bowl. Add mayonnaise and seasonings to the egg yolks. Mash and mix everything together until smooth and well combined.
Fill the Egg Whites: Spoon or pipe the filling mixture into the hollowed-out egg whites.
Chill and Garnish: Place the filled eggs on a serving platter and refrigerate for at least 30 minutes to chill and firm up. Before serving, garnish with fresh dill, chives, or parsley if desired.
Serve: Arrange the deviled eggs on a serving platter and serve chilled.
