Spiced Potatoes (Spicy Potato Curry)
These Indo-Pak inspired spiced potatoes come together quickly for a fast, flavor packed entree or side. They are delicious, versatile, and pair well with naan, rice, yogurt raita - you name it! Whipped up in just about 30 minutes, they make for a perfect weekday meal and have the potential to become your new weekly staple.
Ingredients:
1 lb russet potatoes, diced
1 large tomato, diced
1⁄2 large onion, diced
1 tbsp garlic
1 1/2 tbsp ginger
1 tbsp salt
1⁄2 tbsp black pepper
1⁄2 tbsp crushed red pepper
1⁄2 tbsp chili powder
1⁄4 cup water
1⁄4 cup cilantro
Cooking Steps:
Prep the potatoes: Dice the potatoes and toss them with salt. Let them sit for 10 minutes so the salt can draw out excess moisture. The salting makes them extra crispy when sautéed.
Cook potatoes: Heat oil in a skillet over high heat. When hot, add the salted potatoes. Cook 5-7 minutes per side until crispy.
Add onions and tomato: Turn down the heat to medium and add onions, tomato, garlic and ginger. Cook for 3-5 minutes.
Add spices: Stir in all spices including chili powder, crushed pepper and black pepper until combined.
Tender potatoes: Pour in 1/4 cup water, cover and cook 10 minutes, until potatoes are fork tender.
Garnish: Garnish with freshly chopped cilantro. Enjoy!
